Cajun Chicken with Guacamole

Serves 4

Ingredients (Chicken)

500 grams chicken breast
1 tablespoon olive oil
1 tablespoon cajun spice
Juice of 1/2 lemon
Salt to taste

Ingredients (Guacamole)

1 avocado
4 cherry tomatoes, diced
1 spring onion
2 tablespoons fresh coriander, chopped
1/2 teaspoon chilli flakes
1/2 teaspoon cumin
Juice of 1/2 lemon
Salt to taste


1. Marinate the chicken with oil, lemon, cajun and salt and set aside

2. To make the guacamole mash the avocado in a bowl and add remaining ingredients

3. In a fry pan add the marinated chicken and cook until brown

4. Serve the chicken with the guacamole
