Here is one of my favourite midweek meal recipes, my Bean and Sausage Hot Pot.

Midweek Meals Recipe: Bean and Sausage Hot Pot

Serves 4


450g packet of Peppercorn Extra Lean Beef Sausages

Spray olive oil

1 leek, finely chopped

1 large carrot, finely chopped

1 zucchini, finely chopped

1 stick celery finely chopped

420g tin 4 Bean Mix

400g tin diced tomatoes


1. Cook sausages over medium heat with a little spray oil.

2. In a saucepan, with a little olive oil lightly cook leek, carrot, zucchini and celery. Once cooked, add 4 bean mix and tomatoes and simmer for 5-10 min until cooked through. Mix in cut up sausages and serve.
