Recipe: Fig, Feta & Hazelnut salad
2 fresh figs, cut into quarters
1 cup baby spinach and rocket mix (~50g)
40g reduced fat feta
1/2 Tbsp. pepitas
1/4 cup canned brown lentils
1/2 Tbsp. balsamic vinegar
Cracked black pepper, to taste
1. Gently toss together all ingredients and season with cracked pepper
