Natures Best: Pumpkin

Pumpkin is, contrary to popular diet opinion, an extremely low calorie and carbohydrate vegetable choice. Pumpkin is 90% water and contains less than 1/2 the carbohydrate of a slice of bread but is packed full of nutrition providing significant amounts of dietary fibre, beta carotene (the precursor to Vitamin A, Vitamin C and potassium).

Pumpkin is an excellent, lower calorie option than potatoes and sweet potato and can be used to make delicious chips, baked vegetables, soups and added to stir fries and salads or mashed and served with lean meat or fish for a tasty, sweet, nutrition rich addition to any meal.
