Ingredients:

  • 1 egg + 1 extra egg white
  • 1 tbsp. water
  • 1 rasher of short cut bacon, diced
  • 1 tbsp. grated parmesan cheese
  • 1/2 tsp. olive oil
  • 1 cup baby spinach leaves
  • 2 cups mixed salad leaves
  • 1 tomato, sliced
  • 1 tsp. extra virgin olive oil
  • 1 tsp. balsamic vinegar
  • Salt and pepper

Preparation Method:

  1. Whisk eggs, water and cheese together until well combined.
  2. Heat oil in a non-stick fry pan on medium heat and cook bacon for 3 minutes until golden.
  3. Add egg mixture to bacon and cook until egg is not longer runny. Add in spinach once egg is cooked.
  4. Dress salad with salt, pepper, oil and vinegar and serve alongside omelette.
