Creamy Broccoli & Cauliflower Soup

If you had to choose one vegetable to include in your diet each day, broccoli would go close to being every nutritionists pick.


  • 1 tsp. olive oil
  • 1/2 large onion, chopped
  • 1 clove garlic, crushed
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup salt-reduced vegetable stock (gluten free if required)
  • 2 cups water
  • 1/2 cup of your milk of choice
  • Salt and pepper for seasoning

Preparation Method:

  1. Heat oil in a large saucepan. Add onion and garlic and sauté until soft
  2. Add broccoli, cauliflower, stock and water. Bring to boil, then reduce heat, cover and simmer for 15 mins.
  3. Remove from heat. Place in a blender and puree until smooth.
  4. Stir in the milk and season well
  5. Return to saucepan and reheat. Serve once warmed through.
