Ingredients:

  • 1/2 tsp. cajun seasoning
  • 100g lamb backstrap
  • 1/4 red onion, finely chopped
  • 1/4 punnet of cherry tomatoes, halved
  • 1 cup baby spinach leaves
  • 125g can 4 bean mix, rinsed and drained
  • Sprinkle of coriander and parsley
  • 1 tsp. olive oil
  • 1 tsp. red wine vinegar

Preparation Method:

  1. Rub the seasoning onto the lamb and cook on a heated pan until browned, slice thickly.
  2. Place remaining ingredients into a bowl, tossing gently to combine.
  3. Serve salad topped with lamb.
