Quinoa is such a popular ingredient at the moment and so such a great alternatively to heavier pasta or rice salads.

Ingredients:

  • 8-10 green prawns
  • 1/4 cup uncooked quinoa
  • 2 cup water
  • 1/2 red capsicum, seeded, diced
  • 1 celery stalks, finely chopped
  • 1 spring onions, finely chopped
  • 1/2 punnet baby tomatoes, chopped
  • 1 tsp. sesame or peanut oil
  • 1 tsp. sweet chilli sauce

Preparation Method:

  1. Sear prawns in a little oil over medium heat until they turn pink and remove from pan.
  2. Combine quinoa in saucepan with 2 cups of water, boil and cook until water is absorbed and quinoa is clear.
  3. Stir in remaining ingredients including cooked prawns and serve.
