Perfect for summer or winter, this recipe is super simple yet to tasty!

Ingredients:

  • 6 cups fish stock
  • 2 kaffir lime leaves, torn
  • 1 tbsp. fish sauce
  • 250g snapper fillets, cut into cubes
  • 2 bunches of broccolini
  • 100g green beans
  • 1 red capsicum, thinly sliced
  • 300g large green prawns, peeled
  • 1/2 cup light coconut milk
  • 150g rice noodles
  • 1/4 cup fresh coriander leaves
  • Lime wedges, to serve

Preparation Method:

  1. Combine stock, lime leaves and fish sauce in a large saucepan and bring to the boil over high heat. Once boiling, reduce heat to low and simmer for 10 mins. Add the snapper and cook for a further 5 mins.
  2. Add all the other vegetables for 2-3 mins. Add the prawns and coconut milk and cook for 3-4 mins.
  3. Cook rice noodles to packet instructions and divide among bowls, ladle broth over noodles, sprinkle with coriander and serve with lime.
