The perfect midweek meal, warming, delicious and easy to make. Serve with a simple green salad to up those salad and veg cups for the day!

Ingredients:

  • 500g chicken breast, skin removed
  • 1 tbsp. olive oil
  • 1 medium onion, finely chopped
  • 2 carrots, chopped into small pieces
  • 1/4 cup flour
  • 2 1/2 cups reduced fat milk
  • 1 cup frozen peas
  • 1 sheet reduced fat puff pastry

Preparation Method:

  1. Preheat oven to 180°C.
  2. Pan fry or grill chicken breast. Set aside.
  3. Over medium heat, cook onion and carrot in a saucepan. Add flour and then gradually stir in milk. Cook until mixture thickens. Remove from heat.
  4. Add peas and chicken to the mix and pour into a pie dish.
  5. Brush pastry with a little olive oil and cut or mould to fit the top of the pie.
  6. Bake for 20-25 mins or until lightly browned then serve.
