For something other than a boring sandwich for lunch, this recipe is easy to prepare the night before or whip up for a simple but delicious lunch.

Ingredients:

  • 125g chicken breast, cut into cubes
  • 1 tsp. lemon zest and 1/4 lemon
  • 1 tsp. oregano
  • 1 tbsp. Greek yoghurt
  • 1/2 Lebanese cucumber, finely sliced
  • 2 tsp. olive oil
  • 1/4 Spanish onion, thinly sliced
  • 1/2 punnet cherry tomatoes, sliced for serving
  • 1/2 slice wholemeal Lebanese bread

Preparation Method:

  1. Combine chicken, lemon zest and oregano and set aside.
  2. In a second bowl, combine yoghurt, cucumber and set aside.
  3. Heat oil over medium heat, add onions. Add chicken and cook until browned through.
  4. Serve chicken with yoghurt mix, chopped tomatoes and 1/2 slice wholemeal Lebanese bread.
